ALMOND FRITTERS
Colonial Cuisine
INGREDIENTS:
  • 1/2 Cup almonds
  • 1/2 Cup thick cream or table cream
  • 1/3 Cup granulated sugar
  • 5 Egg yolks, slightly beaten
  • 1/2 Cup flour
  • A pinch of salt
  • 1 Tsp. Almond extract
  • 2 Tbsp. Orange juice
  • The rinds of 1/2 an orange and 1/2 a lemon, grated
  • 2 Egg whites
  • Vegetable oil for frying
  • Powdered sugar for sprinkling

  • MAKES 30 FRITTERS:
PREPARATION:

The night before, cover the almonds in hot water and let them soak. Remove the skins and grind until obtaining a thick texture. Mix the almonds, thick cream or table cream, and the granulated sugar. Slowly incorporate the yolks, flour, salt, and the orange and lemon rinds. Beat the egg whites until soft peaks form and incorporate them into the mix. The dough must be soft. Add a little more flour if the dough is not firm enough. Heat the oil in a deep pot - it must be at least 5 cm in depth. Add the mixture in spoonfuls. Fry the fritters until they're golden brown, 4 minutes on each side. Place on paper towels to eliminate excess oil and sprinkle them with powdered sugar once cooled.

Place 2 fritters on a dessert plate and sprinkle with powdered sugar.
